British spears are hand-harvested and a plentiful crop is reliant on a cool, crisp early spring. Discover more seasonal recipe ideas at 5oclock apron.com<\/figcaption><\/figure><\/div>\n\n<p class=\"article-full-body sans-serif\" style=\"font-size:22px\"><strong><span style=\"color:#9bac34\" class=\"has-inline-color\">INGREDIENTS<\/span><\/strong><\/p>\n\n<p class=\"article-full-body sans-serif\">\u2022 <span style=\"color: rgb(18,18,18)\">400g shortcrust pastry<\/span><\/p>\n\n<p class=\"article-full-body sans-serif\">\u2022 <span style=\"color: rgb(18,18,18)\">4 eggs<\/span><\/p>\n\n<p class=\"article-full-body sans-serif\">\u2022 <span style=\"color: rgb(18,18,18)\">300ml double cream<\/span><\/p>\n\n<p class=\"article-full-body sans-serif\">\u2022 <span style=\"color: rgb(18,18,18)\">Salt and freshly ground black pepper, to taste<\/span><\/p>\n\n<p class=\"article-full-body sans-serif\">\u2022 <span style=\"color: rgb(18,18,18)\">15 asparagus spears, approximately, trimmed<\/span><\/p>\n\n<p class=\"article-full-body sans-serif\">\u2022 <span style=\"color: rgb(18,18,18)\">Small bunch of chives, finely chopped<\/span><\/p>\n\n<p class=\"article-full-body sans-serif\">\u2022 <span style=\"color: rgb(18,18,18)\">Chive flowers, if you have them, to decorate<\/span><\/p>\n\n<p class=\"article-full-body sans-serif\" style=\"font-size:22px\"><strong><span style=\"color:#9bac34\" class=\"has-inline-color\">METHOD <\/span><\/strong><\/p>\n\n<p class=\"article-full-body sans-serif\"><strong>1. <\/strong> <span style=\"color: rgb(18,18,18)\">Pre-heat the oven to 180\u00baC and put a large pan of well-salted water on to boil. <\/span><\/p>\n\n<p class=\"article-full-body sans-serif\"><strong>2. <\/strong>Lightly flour the work surface then roll out the pastry (3\u20135mm thick) to fit a 26cm tart tin. Leave the edges of the pastry bigger than the tin, as it will shrink during cooking. Prick the base of the pastry with a fork and line with greaseproof paper then fill with baking beans and blind-bake at 180\u00baC for 15\u201320 mins. <\/p>\n\n<p class=\"article-full-body sans-serif\"><strong>3. <\/strong>While the pastry case is cooking, whisk three eggs in a jug with the cream and season to taste with salt and freshly ground black pepper, then put to one side. <\/p>\n\n<p class=\"article-full-body sans-serif\"><strong>4. <\/strong>Remove the greaseproof and baking beans from the tart case and continue cooking for 10 mins, until the pastry is crisp and golden. Remove from the oven.<\/p>\n\n<p class=\"article-full-body sans-serif\"><strong>5. <\/strong>Beat the remaining egg and brush the pastry all over to seal. Use a sharp knife to trim the edges of the pastry flush with the sides of the tin. Reduce oven to 170\u00baC. <\/p>\n\n<p class=\"article-full-body sans-serif\"><strong>6. <\/strong>Boil the asparagus spears in well-salted water for around two mins until just tender. Once cooked, remove and plunge into cold water, then drain well. <\/p>\n\n<p class=\"article-full-body sans-serif\"><strong>7. <\/strong>Arrange the cooked spears on the tart and carefully pour the filling into the pastry case to fill. Bake in the oven for around 20\u201325 mins, until the filling is just set, still with a slight wobble in the very centre.
