The same water-soluble pigments also tinge some autumn leaves red.\u00a0<\/p><p>Studies have identified <a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pmc\/articles\/PMC9027082\/\" target=\"_blank\" rel=\"noreferrer noopener\">more than 25 different anthocyanins in strawberries<\/a>, with levels changing depending on the variety. The main one is pelargonidin-3-glucoside, which gives a bright red colour, followed by cyanidin-3-glucoside. Exposing strawberries to UV <a href=\"https:\/\/www.sciencefocus.com\/science\/what-is-light\">light<\/a> after they\u2019ve been picked, increases the anthocyanin levels.\u00a0<\/p><p>Lab tests have shown anthocyanins to be powerful antioxidants with health-boosting effects, including a reduced risk of <a href=\"https:\/\/www.sciencedirect.com\/science\/article\/pii\/S2161831322005580#:~:text=Epidemiological studies suggest that increased,mortality among men and women.\" target=\"_blank\" rel=\"noreferrer noopener\">cardiovascular disease<\/a> and anti-cancer properties. It\u2019s hard to assess exactly how active the substances are in humans, following digestion, however.
