Sam trained as a chef, and worked at establishments including 40 Maltby Street and St John in London, and on moving to Bristol they paired up to open and run the hugely loved Birch in south Bristol. They became increasingly interested in serving natural wines: wine made using simple or traditional methods. <\/p><p>\u201cFor holidays we would take a tent and visit our favourite natural wine producers. It struck me as a really nice life,\u201d says Sam. One of the Italian producers had no land of his own and rented parcels of old neglected vines. \u201cSomething just clicked. If I had grown up in the Languedoc I would have wanted to make red wine and if I\u2019d been born in Scotland I might have wanted to make Scotch. But I grew up in Somerset, surrounded by cider orchards. Here cider making is the logical thing to do.\u201d <\/p><div class=\"is-layout-constrained is-layout-constrained wp-block-group highlight-box\"><div class=\"wp-block-group__inner-container\"><p>You may also like<\/p><ul><li><a href=\"https:\/\/www.gardensillustrated.com\/garden-advice\/how-to\/how-to-grow-apples\">Training apple trees<\/a><\/li><li><a href=\"https:\/\/www.gardensillustrated.com\/gardens\/country\/deryck-body-farmhouse\">A life outdoors: Deryck Body and his farmhouse garden<\/a><\/li><li><a href=\"https:\/\/www.gardensillustrated.com\/gardens\/tillingham-winery\">Tillingham Winery&#8217;s late summer garden<\/a><\/li><\/ul><\/div><\/div><p>They started making cider from the <a href=\"https:\/\/www.gardensillustrated.com\/garden-advice\/how-to\/how-to-grow-apples\">apples<\/a> in a friend\u2019s garden, found they loved it, and created Wilding Cider.<\/p><p>Cider apples are indeed perfectly suited to Somerset. They grow well on its clay soils and flower late, so missing late frosts, plus they are thick skinned and hard, which means they can be left to reach full ripeness and flavour and then fall naturally to the ground before being harvested. <\/p><figure class=\"wp-block-image size-full\"><figcaption class=\"wp-element-caption\">Sam and Beccy Leach harvesting apples at their orchard in Somerset. Ciderapples are left to fall to the ground and then collected up, which ensures they are able to reach ripeness and that their flavours fully develop. &#8211; \u00a9 Andrew Montgomery<\/figcaption><\/figure><p>But old orchards are in decline. Many were planted up between the 1950s and 1960s to provide apples for the big factory cider makers, such as Thatchers, Taunton Cider and Coates Cider. Over time these big producers have changed their methods and often source apples and juice elsewhere, leaving the apple growers with little reason to invest in their maintenance and nowhere to sell their apples, instead leaving them to rot on the <a href=\"https:\/\/www.gardensillustrated.com\/plants\/trees\">trees<\/a>.<\/p><blockquote class=\"wp-block-quote\"><p>I grew up in Somerset, surrounded by cider orchards. Here cider making is the logical thing to do.<\/p><\/blockquote><p>Wilding Cider now manages several old apple orchards in addition to its own orchard at Chew Magna. From <a href=\"https:\/\/www.gardensillustrated.com\/plants\/autumn\/\">autumn<\/a> to <a href=\"https:\/\/www.gardensillustrated.com\/christmas\">Christmas<\/a> the work is all in harvesting, juicing and making cider, but for the rest of the winter they undertake renovation pruning and a programme of \u2018top working\u2019: grafting their chosen cultivars on to old trees. <\/p><figure class=\"wp-block-image size-full\"><img loading=\"lazy\" width=\"2560\" height=\"1920\" src=\"https:\/\/c02.purpledshub.com\/uploads\/sites\/40\/2023\/10\/GILLCiderFuji-296_preview-edited-scaled.jpg\" alt=\"Cider making Somerset\" class=\"wp-image-161193\"\/><figcaption class=\"wp-element-caption\">A young tree of cider apple Malus domestica \u2018Yarlington Mill\u2019.<\/figcaption><\/figure><p>The big cider makers lean strongly towards \u2018bittersweets\u2019 (apples with low acid and high tannin) and Sam is trying to shift the balance of cultivars towards those he finds more useful for natural cider making, following bio-dynamic principles. <\/p><blockquote class=\"wp-block-quote\"><p>The juice is fermented by wild yeasts.<\/p><\/blockquote><p>\u201cWe don\u2019t add anything to our juice. It is fermented by wild yeasts and we don\u2019t pasteurise, filter or refine, and that means that the acidity needs to be just right.\u201d Sam has found that \u2018bittersharps\u2019 (high acid and high tannin) create the right acidity and the most interesting flavours, and has top worked well-known bittersharp cultivars such as \u2018Kingston Black\u2019 and \u2018Stoke Red\u2019 on to the trees at their home farm, as well as local and more obscure cultivars such as \u2018Gin\u2019, \u2018Backwell Red\u2019 and \u2018Court Wick\u2019.<\/p><figure class=\"wp-block-image size-full\"><img loading=\"lazy\" width=\"2560\" height=\"1920\" src=\"https:\/\/c02.purpledshub.com\/uploads\/sites\/40\/2023\/10\/GILLCiderTwo35285_preview-edited-scaled.jpg\" alt=\"Cider making Somerset\" class=\"wp-image-161194\"\/><figcaption class=\"wp-element-caption\">After picking, the apples are washed and sorted by hand. Any that are rotten or insect damaged are rejected and composted.<\/figcaption><\/figure><p>Beccy has begun to bring sheep in to graze beneath the trees in the summer, part of a determination to farm sustainably. \u201cThe sheep keep the <a href=\"https:\/\/www.gardensillustrated.com\/garden-design\/soft-landscaping\/best-grass-seed\">grass<\/a> the perfect length and trample it to create a cushion for the apples to land on, and the grass feeds the sheep; a good, productive system. <\/p><blockquote class=\"wp-block-quote\"><p>Natural cider is by far the most sustainable, regenerative drink you will find<\/p><\/blockquote><p>&#8220;Cider apple farming can be genuinely regenerative. The trees grow for 100 years, with all of that carbon locked away throughout. There are no inputs and it is wonderful for <a href=\"https:\/\/www.gardensillustrated.com\/garden-advice\/how-to\/attract-wildlife-garden\">wildlife<\/a>. Natural cider is by far the most sustainable, regenerative drink you will find.\u201d <\/p><p>They are delighted to have found a way to combine the nurturing of this historic landscape with the creation of such a special product. \u201cWhat we are doing is a part of the landscape here. Within living memory orchards were thriving, but they almost died, along with the skills around them.
