Originally, the Field really was a field \u2013 a plain, long, uncultivated rectangle sloping up and away from a handsome collection of stone farm buildings. Swiss couple Iwan and Manuela Wirth added a contemporary art gallery and asked Piet to provide a master plan for the whole site.<\/p><figure class=\"wp-block-image size-full\"><figcaption class=\"wp-element-caption\">Oudolf Field at Hauser and Wirth, Somerset<\/figcaption><\/figure><p>You see immediately why it is not called a garden. It is uncompromisingly faithful to its setting; the field stretches out like a huge, flat canvas that Piet has painted in great swoops of perennial plants, with<br\/>no intervening trees or shrubs. In spring there are <a href=\"https:\/\/www.gardensillustrated.com\/plants\/spring\/camassias-how-to-grow\">camassias<\/a> and <a href=\"https:\/\/www.gardensillustrated.com\/plants\/how-to-grow-alliums\">alliums<\/a>, but the planting is designed to reach a thundering crescendo in summer, with <a href=\"https:\/\/www.gardensillustrated.com\/plants\/summer\/rudbeckia-growing-care\">rudbeckias<\/a> and <a href=\"https:\/\/www.gardensillustrated.com\/plants\/planting-ideas\/plants-for-full-sun\">echinaceas<\/a>, <a href=\"https:\/\/www.gardensillustrated.com\/plants\/summer\/orange-plants-garden\">heleniums<\/a> and sedums, actaeas and <a href=\"https:\/\/www.gardensillustrated.com\/plants\/veronicastrum-best-plants\">veronicastrums<\/a>.<\/p><figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"1452\" height=\"968\" src=\"https:\/\/c02.purpledshub.com\/uploads\/sites\/40\/2024\/02\/JI_091415_PietOudolf_190-v2_preview.jpg\" alt=\"Oudolf Field at Hauser and Wirth, Somerset\" class=\"wp-image-166934\"\/><figcaption class=\"wp-element-caption\">Oudolf Field at Hauser and Wirth, Somerset &#8211; \u00a9 Jason Ingram<\/figcaption><\/figure><p>Steel-edged ovals of grass \u2013 now oversown with more hard-wearing clover \u2013 punctuate the main route through the garden. In a narrow side border its colour is cooled slightly by a misty mass of blue <em>Eurybia x herveyi<\/em> and the white daisy <em>Doellingeria umbellata<\/em>. At the other end of the border the boldly branching stems of the sweet coneflower, yellow <em>Rudbeckia subtomentosa<\/em> add balance to the helenium. Both of these have <a href=\"https:\/\/www.gardensillustrated.com\/plants\/seedheads-for-winter-structure\">seedheads<\/a> that will last through the winter.<\/p><figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"2560\" height=\"1707\" src=\"https:\/\/c02.purpledshub.com\/uploads\/sites\/40\/2024\/02\/JI_091415_PietOudolf_420-v2_preview-scaled.jpg\" alt=\"Oudolf Field at Hauser and Wirth, Somerset\" class=\"wp-image-166933\"\/><figcaption class=\"wp-element-caption\">Oudolf Field at Hauser and Wirth, Somerset &#8211; \u00a9 Jason Ingram<\/figcaption><\/figure><p\/><p><strong>Textured tufts <\/strong><\/p><p>This bed at the top end of the Oudolf Field is dominated by the striking pale bobbles of <em><a href=\"https:\/\/www.gardensillustrated.com\/plants\/summer\/eryngium-how-to-grow-best\">Eryngium<\/a> yuccifolium <\/em>above its spiny blue-grey leaves. The soft, hazy colours are punctuated by the bronze-mahogany flowers of <em>Helenium<\/em> \u2018Moerheim Beauty\u2019, one of Piet\u2019s favourite plants. Towering over its companions is the aptly named <em><a href=\"https:\/\/www.gardensillustrated.com\/plants\/flowers\/sanguisorba-best-growing-cultivate\">Sanguisorba officinalis<\/a><\/em> \u2018Red Buttons\u2019, one of the fast-growing family of burnets that have deservedly become favourites in New Perennial plantings. The dried heads of <em>Allium nigrum<\/em>, which provided colour earlier in the season, will stand throughout the winter.<\/p><figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"2560\" height=\"1920\" src=\"https:\/\/c02.purpledshub.com\/uploads\/sites\/40\/2024\/02\/JI_091415_PietOudolf_255-v2_preview-scaled.jpg\" alt=\"Oudolf Field at Hauser and Wirth, Somerset\" class=\"wp-image-166930\"\/><figcaption class=\"wp-element-caption\">Oudolf Field at Hauser and Wirth, Somerset &#8211; \u00a9 Jason Ingram<\/figcaption><\/figure><p\/><p><strong>Pale and interesting <\/strong><\/p><p>Muted tones predominate in this generous curving border by the hedge on the southern boundary of the Oudolf Field. In the foreground is a selection of the purple moor-grass <em>Molinia caerulea<\/em> \u2018Edith Dudszus\u2019, its fine plumes provide an excellent contrast with the knobbed seedheads of <em><a href=\"https:\/\/www.gardensillustrated.com\/garden-advice\/dry-gardens\/drought-tolerant-plants\">Phlomis<\/a> russeliana<\/em>. Creating soft pools of mauve are <em>Aster amellus<\/em> \u2018Sonora\u2019 and, at the far end, the taller, reclassified aster <em><a href=\"https:\/\/www.gardensillustrated.com\/plants\/the-best-asters-daisys-grow\">Symphyotrichum<\/a><\/em> \u2018Little Carlow\u2019. In between is <em>Anemone<\/em> x <em>hybrida<\/em> \u2018Honorine Jobert\u2019, an old cultivar but still one of the best with white petals around a shining golden eye.<\/p><figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"2560\" height=\"1707\" src=\"https:\/\/c02.purpledshub.com\/uploads\/sites\/40\/2024\/02\/JI_091415_PietOudolf_388-v2_preview-scaled.jpg\" alt=\"Oudolf Field at Hauser and Wirth, Somerset\" class=\"wp-image-166932\"\/><figcaption class=\"wp-element-caption\">Oudolf Field at Hauser and Wirth, Somerset &#8211; \u00a9 Jason Ingram<\/figcaption><\/figure><p\/><p><strong>Subtle lines <\/strong><\/p><p>The grass paths that separate the different beds disappear altogether in this long view over the planting at the top end of the Oudolf Field. At one end is <em>Sedum<\/em> \u2018Matrona\u2019, with its purple flowers and dusky foliage, which flowers over a long period in late summer. Its colour is contrasted with the grey-blue of <em>Perovskia<\/em> \u2018Little Spire\u2019 and the silvery-green flowers of <em>Sesleria autumnalis<\/em>, which are held above bright foliage. At the far end, the purple of the sedum\u2019s foliage is echoed in a giant stand of Joe Pye weed, <em>Eupatorium maculatum Atropurpureum<\/em> Group, used as a backstop in the furthest corner of the field.<\/p><p\/><figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"2560\" height=\"1920\" src=\"https:\/\/c02.purpledshub.com\/uploads\/sites\/40\/2024\/02\/JI_091415_PietOudolf_253-v2EXTENDED_preview-edited-1-scaled.jpg\" alt=\"Oudolf Field at Hauser and Wirth, Somerset\" class=\"wp-image-166942\"\/><figcaption class=\"wp-element-caption\">Oudolf Field at Hauser and Wirth, Somerset<\/figcaption><\/figure><p>Central beds seem to merge in a single mass of plants: with dark-purple <em>Sedum<\/em> \u2018Matrona\u2019 and the creamy, flat-topped umbels of <em>Selinum wallichianum<\/em>. At the top of the garden is Smiljan Radic\u00b4\u2019s squat fibreglass pavilion.<\/p><p>As head gardener <a href=\"https:\/\/www.gardensillustrated.com\/gardens\/gardeners\/hauser-wirth-gardener-mark-dumbleton\">Mark Dumbleton<\/a> points out, Piet chooses tough plants, which is just as well because growing conditions here are not easy. Two thousand tons of topsoil were brought in for the planting beds, intentionally low in fertility but structurally very poor, which has created difficulties. Underneath, the ground is solidly compacted clay and plants struggle to punch their roots through it. In the Oudolf Field, 26,000 plants have to be kept alive and in balance with each other. Piet is the first to acknowledge that, to endure, his style depends on a good gardener.
