We put branded products to the test so you know which ones to choose. This month, we tried different apple cider vinegars to see which came out on top<\/p>\n\n

WHAT IS APPLE CIDER VINEGAR?<\/strong><\/p>\n\n\n\n

Simply put, it\u2019s vinegar made from fermented apple juice. The juice is fermented into cider, after which a vinegar mother (a gelatinous blob of friendly bacteria) is added. This feeds on the alcohol and sugars, creating acetic acid as a by-product. Apple cider vinegar is often advertised as being sold \u2018with the mother\u2019 \u2013 this means it is unfiltered and will contain more of the enzymes and gut-friendly bacteria.<\/p>\n\n\n\n

HOW WE TESTED<\/strong><\/p>\n\n\n\n

We tasted each vinegar on its own, looking for a pronounced apple flavour, smoothness, balance of sugar and acid, and its \u2018length\u2019 \u2013 how long the flavour stays on your tongue.<\/p>\n<\/div><\/section>\n\n

RAW organic apple cider vinegar, \u00a35.75 (1 litre)<\/strong><\/p>\n\n

Very vinegary with little pronounced apple or cider flavour. Not a huge amount of sweetness, either.<\/p>\n\n

5\/10<\/strong><\/p>\n\n

Aspall organic apple cyder vinegar, \u00a32.60 (500ml)<\/strong><\/p>\n\n

This has little apple flavour \u2013 if we didn\u2019t know otherwise, we wouldn\u2019t have known it was made from the fruit. But it is a smooth, balanced vinegar. <\/p>\n\n

6\/10<\/strong><\/p>\n\n

Biona Organic cider vinegar<\/strong>, \u00a32.69 (500ml)<\/strong><\/p>\n\n

This has an aroma and initial flavour of Breton cider \u2013 oaky, with farmyard and fermented notes. Sadly, that fades to a very vinegary flavour \u2013 almost malt vinegar in its profile. <\/p>\n\n

6\/10<\/strong><\/p>\n\n

Bragg organic apple cider vinegar<\/strong>, \u00a36.99 (473ml)<\/strong><\/p>\n\n

A good vinegar. Strong cider aromas on the nose, with a deep, long flavour. A big initial hit of vinegar that then mellows, with a touch of sweetness. <\/p>\n\n

7\/10<\/strong><\/p>\n\n

Osu apple cider vinegar<\/strong>, \u00a37 (500ml)<\/strong><\/p>\n\n

We juggled with whether to include this or not, as it\u2019s actually apple cider vinegar mixed with juice. But its flavour swayed us: sweet, sour and syrupy like balsamic vinegar but with deep apple flavour. Great with oil for dipping bread into. <\/p>\n\n

8\/10<\/strong><\/p>\n\n

Willy\u2019s organic apple cider vinegar,<\/strong> \u00a36.95 (500ml)<\/strong><\/p>\n\n

This has a kombucha-like, fermented smell on the nose, with a real roundness. A big punch of apple cider flavour, excellent balance of sweet and sour, and the best length of the bunch. A stand-out winner. <\/p>\n\n
